What is cloud bread?
Prior to the cloud bread TikTok trend, cloud bread referred to a ‘bread’ made with ingredients like egg, cream of tartar, cream cheese and greek yogurt.
Since that cloud bread isn’t made with any carbs, it’s keto friendly (adhering to a low carb, high fat diet.) It’s eaten as a replacement to regular bread, and usually used for sandwiches.
Then came the TikTok cloud bread. Though there are now over a billion videos with #cloudbread, it’s said that the first video appeared from TikTok user, @linqanaaa. You can see the video here.
This version of cloud bread is not a replacement for bread. Neither is it keto friendly, as it contains sugar. Many versions on TikTok have added food coloring, sprinkles and other flavors. We tried ours with coffee.
What does TikTok cloud bread taste like?
Since it’s made with just three ingredients, egg whites, sugar and cornstarch, it’s more like a dessert than a bread. If you’ve been to an Asian bakery and had an Asian sponge cake, I’d consider our coffee flavored cloud bread a version of that. Almost.
Cloud bread leans more towards a meringue or pavlova (a dessert popular in Australia and New Zealand), which is also made with egg whites, white sugar and cornstarch, but minus the cream and fruit toppings.
If you don’t add coffee, or other flavors like vanilla extract, it tastes like (no surprise) sweet eggs.
How to Make Cloud Bread
While we’ve shared recipes using concentrated coffee, cold brew and ground coffee, for this cloud bread recipe, we prefer to keep it simple, as these trendy TikTok recipes usually are.
So instant coffee it was. Plus, it dissolves easily. You can use any you have at home. We used Nescafe Clasico.

TikTok Cloud Bread Ingredients
- 3 egg whites
- 2 ½ tablespoons sugar
- 1 tablespoon cornstarch
- 2 teaspoons instant coffee (check out the best instant coffee brands here)
If you want to make regular TikTok cloud bread before trying a coffee version, don’t add the instant coffee and add a splash of vanilla extract.
Step 1
Separate egg whites from egg yolks.
Not sure what to do with the egg yolks? You can make our Vietnamese egg coffee, which calls for egg yolks.
Step 2
Using an electric mixer, mix the eggs, sugar and cornstarch together. I gradually added in the cornstarch as I mixed the eggs and sugar together.
Keep mixing until stiff peaks form.
Step 3
Pour the mixture onto a baking sheet lined with parchment paper. Bake at 350 degrees Fahrenheit for 25 minutes.
Would I make this again? Probably not. When I’m craving a coffee flavored baked dessert, I’d stick to my coffee flavored chocolate chip cookies.
But this cloud bread is so easy to make and I had to satisfy my curiosity. And I mean, it does kind of look cool. It’s fluffy, spongy and satisfying to tear apart.
