We took the flavors found in a classic snickerdoodle cookie that reminds us of autumn and the holidays, but can (and should!) be enjoyed all year round, and put it into a cup of coffee.

You can use your favorite coffee and brew it with cinnamon. Then use your favorite type of milk or milk alternative, add in brown sugar and combine the coffee and milk together for this coffee treat. Better yet, enjoy it with an actual snickerdoodle cookie.
What is a snickerdoodle?
A snickerdoodle is a soft and chewy cookie that’s made with flour, butter, sugar, eggs, baking soda and cinnamon. It’s the cinnamon that makes this cookie different from a sugar cookie.
And because of this delicious sugary cinnamon flavor, I associate the cookie with autumn and cooler weather.
The flavor also works well for candles and scents for the home during the holidays. So I thought, why not work this into coffee as well?
Here’s how to make a snickerdoodle coffee.
Snickerdoodle Coffee Ingredients
- 2-4 shots (ounces) espresso (I used Illy Intenso Whole Beans)
- ¼ teaspoon ground cinnamon
- 1 cup milk
- ½ tablespoon brown sugar
Espresso
Use your favorite pre ground or whole bean coffee. I used Illy Intenso Whole Beans.
I prefer using whole beans for my cups of coffee so I use the Hario Skerton Grinder to grind my coffee beans right before brewing for the freshest coffee possible.
To brew the espresso, I used a stovetop moka pot. If you do not have an espresso machine at home, this is the next best option to make espresso at home. If you have neither, brewing coffee in any brewing device you already have at home will work as well.
Since espresso is concentrated, you don’t need too much coffee, just around 2 shots (2 ounces) of espresso. But if you’re using a drip coffee maker like a Keurig, you may need to use a little more like a ½ cup of coffee.
Ground cinnamon
Cinnamon does not dissolve in coffee, so the best way to add cinnamon flavor to coffee is by brewing it with the coffee grounds.
To do this, stir in ground cinnamon into your ground coffee and brew as you usually would. With a moka pot, which I used, I put the ground coffee in the filter basket that holds the coffee ground.
Then, added the ground cinnamon on top and used a spoon to mix it in. The cinnamon taste will brew into the coffee without leaving any traces of cinnamon in the moka pot for the next time that you brew it without cinnamon.
Milk
Use your milk of choice. You can use whole, skim or milk alternatives. I used almond milk. You can use a barista blend milk alternative if you want your milk alternative to froth like regular milk. These barista blends are made to froth just like regular milk.
In this snickerdoodle coffee recipe, I steamed the milk before pouring it into the espresso. You can do this in a few ways. You can put it over the stovetop, stick it in the microwave or use an electric milk frother.
I used a milk frother on the heat milk setting. This is convenient since I can just pour in the brown sugar into the milk and let it dissolve while it steams.
A milk frother also allows you to create an extra layer of milk foam on top. This is optional, but you can put an additional ¼ cup of milk into your milk frother on a froth setting (mine is the hot, dense foam setting), which will create a layer of thicker milk so you can decorate it with sprinkle of more ground cinnamon, cocoa powder or a drizzle of your favorite caramel or chocolate sauce.
How to Make Snickerdoodle Coffee
Step 1
Grind coffee beans and add cinnamon to the grounds. Then brew the coffee.
I used a stovetop moka pot.
Step 2
While coffee is brewing, steam milk and stir in brown sugar.
I put the milk and brown sugar in a milk frother and used the heat milk setting to make it warm.
You can also steam milk over the stovetop or in the microwave.
Step 3
Pour coffee and milk into a mug.
Optional: Use an additional ¼ cup of milk if you prefer more milk foam. I used the milk frother on the hot, dense foam setting and topped it with more ground cinnamon.
