Eat a pumpkin spice latte – by making pumpkin spice latte overnight oats!

If you haven’t yet, now might just be the time to make it, especially if you love pumpkin spice lattes. 

This pumpkin spice latte overnight oats brings the flavors of the popular fall drink into a breakfast food.

All you need to do is mix together all of the ingredients in a mason jar, store it in the refrigerator overnight and it’s ready to eat in the morning. 

No cooking is required. Just a few minutes to measure out the ingredients and several hours for the oats to soak. Then take it out of the refrigerator and enjoy it right away. No need to heat it up (unless you want to.)

What’s a Pumpkin Spice Latte?

The Pumpkin Spice Latte is a seasonal drink created by Starbucks. 

A latte is a coffee drink that’s typically made of one or two shots of espresso with steamed milk and a layer of milk foam on top (where latte art sits!)

In a pumpkin spice latte, there’s espresso, steamed milk and a pumpkin spice sauce that’s made of sugar, pumpkin puree and other flavors. It’s then complete with a generous layer of whipped cream and sprinkled with a pumpkin spice topping. (There’s also an instant PSL mix from Starbucks so you can make it at home.)

Though the drink is associated with the fall season, I’ve seen it available in Starbucks as early as August, even when it didn’t feel like fall quite yet. But fans of pumpkin spice lattes know it’s never too early for pumpkin flavored drinks!

Pumpkin Spice Latte Overnight Oats Ingredients

This recipe makes two servings and fits in one 16 ounce mason jar. 

Rolled oats

Overnight oats require rolled oats, also known as old fashioned oats. These are the best oats to use for overnight oats. 

Though you could use instant oats or quick oats, leaving them in liquid overnight will make the oats very soft and a bit mushy. And if you use steel cut oats, the liquid may not soften the oats as well as rolled oats. 

So rolled oats are the perfect oats to use for overnight oats. They still hold the shape, but are soft enough to eat without much effort. 

Coffee

Since pumpkin spice lattes are made with espresso, you could use espresso as well. If you don’t have an espresso machine at home, you can use a stovetop moka pot to make a concentrated coffee. 

But you don’t even need to use espresso. You can use any type of brewed coffee using your coffee beans of choice. Feel free to brew a little extra coffee than you usually would in the morning and set it aside to make these overnight oats. 

I used cold brew coffee concentrate made with Stone Street whole beans. I make a very concentrated cold brew concentrate using 1 part coarsely ground coffee to 2 parts water. You can read my guide to making cold brew coffee concentrate in 3 easy ways. 

If you’ve never made cold brew coffee before, it’s super simple and you don’t need any special tools. If you have an empty pasta jar at home, you can make cold brew coffee. 

Milk

I used Good Karma flax milk. It’s an unsweetened vegan and dairy free milk alternative.

You can use regular milk or any of your favorite milk alternatives will work as well. 

Pumpkin

I used Farmer’s Market Organic Pumpkin. It’s a canned pumpkin puree that I also use for my pumpkin spice coffee creamer and pumpkin bread. 

Canned pumpkin usually comes in 15 ounce (about 2 cups) cans. If you make my pumpkin bread, it requires around 1 cup of pumpkin. My pumpkin spice coffee creamer requires around 2 ounces and this pumpkin spice latte overnight oats require a ¼ cup of pumpkin.

So if you don’t know what to do with leftover pumpkin, you can make all 3 of these recipes using one can. 

Pumpkin pie spice 

Pumpkin pie spice is a blend of ground cinnamon, ginger, nutmeg and cloves. There might be a few different spices in the blend depending on the company. The one I used from Trader Joe’s contains lemon peel and cardamom in addition to cinnamon, ginger, nutmeg and cloves. 

If you don’t have this at home but have ground cinnamon, ginger, nutmeg and cloves, you can mix them together and you have pumpkin pie spice. 

Maple syrup

I start with just 2 teaspoons of maple syrup. The result is not a very sweet pumpkin spice latte overnight oats, which I prefer. So if you want it to be sweet, add more maple syrup to taste. 

If I feel like having it a little sweeter, I prefer adding additional maple syrup after it has been in the fridge overnight and right before I eat it. 

Chia seed

This is optional. I like to add chia seeds to my overnight oats for two reasons. One is because it soaks up the liquid a bit, so it results in a slightly less watery consistency. It doesn’t have any flavor so it won’t affect the taste of your overnight oats. 

The second reason I like adding it is because of its health benefits, including that it’s high in antioxidants and fiber. 

How to Make Pumpkin Spice Latte Overnight Oats

Step 1 

Gather all the ingredients and pour into a mason jar

It might help to use a funnel to pour the liquids in.  

Step 2 

Stir all ingredients together. 

I find using a chopstick makes this much easier to do than a spoon. 

Step 3 

Put the lid on tightly and store in the refrigerator overnight (or for at least 6 hours.)

Add extra maple syrup to taste.

  • 1 cup rolled oats
  • ½ cup brewed coffee
  • ½ cup milk or milk alternative (I used flaxseed milk) 
  • ¼ cup pumpkin puree
  • ¼ tsp pumpkin pie spice
  • 2 tsp maple syrup
  • 2 tbsp chia seeds

Instructions

1. Gather all the ingredients and pour into a mason jar
