Where is Dalgona Coffee from?
The Dalgona coffee recipe was originally from a coffee shop in Macau, where the owner would manually whip the beverage 400 times by hand before serving. For that reason, Dalgona coffee is also known as “400 Times Coffee”, which suggests its been manually stirred for that many times to achieve the dense caramel flavored in the frothy foam.
Dalgona coffee went viral after the visit of a Korean actor, Jung Il-Woo, to the coffee shop in Macau. The new trend apparently started around January 2020 when Jung Il-Woo made the beverage on a foodie TV show, and later showed how to make the beverage on social media.
Since then, even non coffee lovers have been talking about this creamy whipped drink and it’s becoming a crowd-pleasing topic during this pandemic time on various platforms. (If you aren’t familiar with Jung Il-woo, he’s in several Korean dramas, including a historical drama, Moon Embracing the Sun, which you can stream on Amazon Prime Video. Maybe even while sipping your cup of Dalgona coffee?)

Step One
Get the ingredients ready. You can see the ratio is super simple 1:1:1. One part instant coffee, one part sugar and one part water.
Step Two
Add instant coffee into a dry mixing bowl. Then add the sugar and water.
Step Three
Using a whisk, whip instant coffee, sugar and water vigorously until it doubles in size or until the mixture is stiff.
This should take about 2-3 minutes and some elbow grease. The mixture will start to thicken after about one minute. (You might opt for an electric hand mixer, or a milk frother to get that perfect consistency.)
Here’s how it looks halfway through whisking. Keep on whipping.
This is the color and consistency you want to achieve. Notice the pale caramel color.
Step Four
Add ice cubes into a glass container. (Use a container like a mason jar so you can show off your creation on social media!)
Step Five
Fill the glass with milk. Don’t overfill your glass and leave some room for the whipped mixture.
Step Six
Spoon the mixture into the glass over the milk.
Step Seven
Top with a dash of coffee ground (optional) and enjoy your cup of Dalgona coffee.
Tips for Making Dalgona Coffee
- It is best to avoid the 3-in-1 type of instant coffee, which contains a blend of instant coffee, sugar, and creamer. Milk powder in the creamer might affect the foaming process and won’t work with this recipe.
- Remember that you can’t use ground coffee as it is not dried and not dissolvable.
- If you prefer a smoother and creamier foam, use powdered sugar.
- Don’t over-whip otherwise the foam will become too thick and hard to mix when drinking.
- You can refrigerate the whipped mixture if you decide to make a large batch. Just make sure you store it in an airtight container, and it will last for up to 2-3 days.
Dalgona coffee is an all-round beverage that can be served on a special occasion or anytime you feel like treating yourself.
Best of all, Dalgona coffee is meant to be something easy to make at home with just a handful of ingredients. All it takes is moderate effort and a fair amount of whipping.
