I’ve added coffee to my favorite breakfast recipes – overnight oats and smoothie bowls. So it’s time to give a classic chocolate chip cookie a coffee update too.
I like to add a heaping teaspoon of salt to my coffee chocolate chip cookies so it’s a bit salty. I opted for dark chocolate chips for a bittersweet chocolatey taste and tablespoons of coffee to give it that coffee flavor that chocolate chip cookies have been missing.

Ingredients
- 2 cups flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 cup butter
- 1 cup brown sugar
- ½ cup white sugar
- ½ teaspoon vanilla extract
- 2 eggs
- 3 tablespoons instant coffee (I used Nescafe Clasico)
- 1 ½ cups chocolate chips or chunks
How to Make Coffee Chocolate Chip Cookies
Step 1
Preheat oven to 375 F. Combine flour, salt and baking soda in a mixing bowl.
Step 2
In another bowl, cream the butter, brown sugar and white sugar.
I used room temperature butter and take the butter out of the fridge an hour or two before I start baking.
Beat in eggs and stir in vanilla and instant coffee. I used Nescafe Clasico. Not sure which instant coffee to use? Check out our list of best instant coffee brands to try.
Step 3
Mix in dry ingredients. Fold in chocolate chips.
Step 4
Chill coffee chocolate chip cookie dough for 30 minutes in the refrigerator.
Chilling cookie dough before baking solidifies fats and is known to make the cookie better shaped, more flavorful and prevents it from spreading.
Step 5
Scoop cookie dough onto a baking sheet. I used a 4 teaspoon cookie scoop for consistency.
I also made bigger cookies with two cookie scoops full of cookie dough for my coffee ice cream sandwiches and added extra salt and chocolate chips on top.
Step 6
Bake for 10-12 minutes. Transfer to a cooling rack. This recipe yields 24 cookies (using the 4 teaspoon cookie scoop.) Enjoy!
