How to Make Brazilian Hazelnut Caffe con Schiuma (Coffee with Foam)

Add a little foam to an espresso.

Have you ever heard of Caffè con Schiuma? I recently encountered this Italian coffee beverage and learned that Schiuma is pronounced as “Sk-you-mah.”

Caffè con Schiuma, which in Italian is Coffee with Foam, is a style of coffee you’ll find in Italy. It is an espresso-based beverage topped with coffee-flavored cream, aka Schiuma. Schiuma is the soul of this drink, which makes the coffee robust and irresistible. (Making the foam is similar to the process of making the trendy whipped Dalgona Coffee.)

If you like flavored coffee, you will love this hybrid Caffè con Schiuma I concocted. To kick it up a notch, I am going to add Brazilian hazelnut syrup to my cup of Caffè con Schiuma.

Step by Step Guide

Step 1

Add 3 teaspoons of granulated sugar to a measuring cup.

Step 2

Measure out 18 grams of ground coffee. Brew about 2 ounces of espresso.

Note: If you do not have an espresso machine, check out our step by step guide to brewing an espresso with Aeropress or a moka pot.

Step 3

Time to make the Schiuma. Scoop 1 teaspoon of espresso out and pour into the measuring cup with sugar.

Step 4

Use a spoon and beat the espresso and sugar mixture lightly until all the sugar is dissolved. Keep mixing until it reaches a cream-like consistency. It should look like wet paint with a glossy surface.

Step 5

Put the desired amount of Schiuma in a demitasse cup, typically 2-3 demitasse spoonfuls.

Step 6

Pour the remaining espresso into the demitasse cup.

Step 7

Mix in a ¼ teaspoon of Brazilian Hazelnut syrup (you can also use a regular hazelnut syrup). Stir thoroughly.

Step 8

It’s ready! Notice the beautiful layer of foam on top.
